(CNN) — Samin Nosrat was raised on a steady diet of Eggo waffles.
Nosrat, who rose to fame on the heels of her James Beard Award-winning cookbook and Netflix series, “Salt, Fat, Acid, Heat,” would look forward to a syrup-showered waffle tower every Saturday morning as a kid.
But since she tried her first bite of the yeast-raised waffles popularized by the late Marion Cunningham — best known for her modern revisions of “The Fannie Farmer Cookbook” — she’s been forever changed.
By sharing one of her most treasured recipes in her latest cookbook, “Good Things: Recipes and Rituals to Share With People You Love,” Nosrat hopes the rest of us will follow suit.
“My kitchen sister Amy Dencler, then a cook and now the chef at Chez Panisse, invited me over for breakfast,” Nosrat recalled in “Good Things.” Nosrat also cooked at the iconic farm-to-table restaurant in Berkeley, California.
“My teeth shattered the lacy edges and sank into the center, releasing more of that toasted yeast flavor,” she wrote. “Marion called them ‘the best waffle I know,’ and I couldn’t agree more. Marion’s recipe — and a couple variations on it — is the only one I’ll allow in my kitchen.”
Unlike Eggos, they require about 10 minutes of prep time the night before. But that minor investment is well worth it to create a gift for your future self.
“I have not been able to achieve that texture with any other batter, and certainly not from a batter that doesn’t rest overnight,” Nosrat told me. “These waffles are lacy, light and crisp, with the perfect capacity to absorb maple syrup. They’re just so good.”
The secret lies in letting the batter rest. In a large bowl or pitcher, stir together a blend of activated yeast, flour, warm milk, eggs, baking soda and butter. Pop it into the fridge to chill out overnight, which allows the yeast to slowly ferment the batter for more complexity of flavor and texture.
The interior turns out airy and tender, while the exterior is delightfully crisp. Then all that’s left to do is wake, cook, drizzle syrup on top and dive in.
Nosrat’s typical weekend morning routine involves “waking up after a not-great night of sleep,” she laughed. “I try to extend the morning by cuddling with my pup in bed, and finally, make my way downstairs for a cup of cardamom-spiked coffee or tea — something warm that smells nice.”
Nosrat sips on her warm beverage while she preheats her waffle iron for this recipe originally devised by Cunningham, which also beautifully embodies the premise behind Nosrat’s best-selling new book.
“The title comes from a Raymond Carver story called ‘A Small, Good Thing,’” she told me. “The epigraph says, ‘Eating is a small,good thing in a time like this.’ When I first read that line, I realized that it’s always ‘a time like this.’ There might be a specific thing that has caused myself or someone pain or hardship that we would love some comfort from.”
That could include these waffles and the company you may invite over to enjoy them.
Marion’s Yeasted Waffles
Fresh from the waffle iron, these yeast-raised treats need no accessories. But if you’re feeling extra, follow Nosrat’s lead and dress up your stack with a schmear of almond butter or peanut butter and a shower of maple syrup. For a savory spin, tuck a slice of crispy bacon in the center of the waffle (pour a thin layer of batter above and below) and top it with a fried egg, Nosrat said.
For a quick-fix weekday breakfast, make a double batch and freeze the extra. On bustling mornings, toast two directly from frozen until warmed through. Top one with nut butter and the other with jam and press them together for a next-level breakfast PB&J.

(CNN) — Finland has detained a ship after a critical undersea telecommunication cable running between the country and Estonia was damaged Wednesday, Finnish authorities said.
Finnish police said in a statement that the vessel suspected of causing the damage was found with its anchor chain lowered into the sea in Finland’s waters, while the damage site itself was in Estonia’s waters.
Incidents like this have become more frequent in recent years, raising suspicions they are the result of sabotage and prompting NATO to launch a project earlier this year specifically aimed at strengthening the protection of critical undersea infrastructure.
Finnish police did not identify the vessel publicly, but said that Finnish authorities have instructed it to stop and raise the anchor, and then took control of it.
The cable runs between the Finnish capital Helsinki and the Estonian capital Talinn. While the extend of the damage was not immediately clear, the incident was serious enough to cause faults that were detected by the Finnish telecommunications provider Elisa, which operates the link.
The police said they were investigating the incident as aggravated criminal damage, attempted aggravated criminal damage, and aggravated interference with telecommunications.

América Latina termina otro año convulso que incluyó —entre otras cosas— elecciones, cambios de gobierno, juicios a expresidentes, numerosas protestas sociales y tensiones entre países. Pero frente a todo esto, la región también tuvo figuras y momentos que la hicieron sonreír, así como recordar lo que sus habitantes son capaces de lograr.
Esta es una selección de algunas alegrías que nos dejó 2025.
El 8 de mayo, Robert Prevost fue elegido como nuevo papa tras la muerte del argentino Jorge Mario Bergoglio, Francisco, quien había encabezado la Iglesia católica desde 2013.
Prevost tomó el nombre de León XIV y, aunque nació en Estados Unidos, también tiene nacionalidad peruana. El pontífice vivió durante más de 20 años en Perú, donde trabajó en Trujillo y Chiclayo. De hecho, fue obispo de esta última ciudad, a la cual dedicó unas palabras en español durante su primer mensaje en el Vaticano.
“Y si me permiten también una palabra, un saludo a todos aquellos y en modo particular a mi querida Diócesis de Chiclayo en el Perú, donde un pueblo fiel ha acompañado a su obispo, ha compartido su fe y ha dado tanto, tanto para seguir siendo Iglesia fiel de Jesucristo”, dijo.
La elección de Prevost como nuevo papa generó alegría en Chiclayo, donde algunos de sus habitantes dijeron a CNN que tuvieron una grata sorpresa con el nombramiento y recordaron que, durante su período como obispo, el pontífice buscó ser alguien cercano a la gente.
El cantante puertorriqueño Benito Antonio Martínez Ocasio, mejor conocido como Bad Bunny, tuvo un 2025 redondo.
Martínez lanzó su más reciente disco, “Debí tirar más fotos”, con el que en julio inició una residencia en el Coliseo de Puerto Rico que se extendió por una treintena de conciertos. Después, comenzó una gira mundial que ya lo llevó a República Dominicana, Costa Rica y México, y que para 2026 lo llevará a otros países de América Latina, así como a Europa, Japón y Australia. Además, en noviembre ganó cinco Latin Grammy, incluido el de álbum del año.
A todo esto se suma el campanazo que dio en septiembre, cuando se dio a conocer que encabezará el espectáculo de medio tiempo del Super Bowl, uno de los espectáculos de mayor audiencia en Estados Unidos. Para algunos analistas consultados por CNN, que Bad Bunny esté en ese foro será una estampa significativa en momentos en que los latinos enfrentan duras políticas migratorias y discriminación por parte del Gobierno de Donald Trump.
“Tener una voz orgullosa en español, una voz que representa a todos los latinos, es tan importante, es tan poderoso. Le da a toda la comunidad el sentimiento de que todos tenemos un momento para sentir que ganamos. En un momento en que muchos se sienten muy abajo, esto se siente como un logro colectivo”, dijo Vanessa Díaz, profesora de Estudios Latinos en la Universidad Loyola Marymount, en una entrevista realizada en octubre.
El 19 de septiembre, la astrónoma mexicana Julieta Fierro murió a los 77 años. Su muerte causó tristeza, pero también numerosos mensajes que reconocieron su constante labor como investigadora y divulgadora de la ciencia en salones de clase, conferencias y espacios en medios de comunicación.
